1. North America: El Salvador
Traditional Salvadoran Guacamole Recipe

Serves 6
3 large ripe avocados
½ cup chopped onion
¼ cup fresh lemon juice
½ teaspoon salt
⅛ teaspoon freshly ground black pepper
1 hard-boiled egg (thin sliced or crumbled)
1 tablespoon grated Romano cheese
¼ teaspoon dried oregano (optional)

In El Salvador, guacamole is not mashed, but gently cubed. The hard boiled eggs and the Romano cheese give it a distinctive texture and unique Salvadoran flavor. Peel, pit, and chop the avocados into small cubes. Add the onion, lemon juice, salt, and pepper, and mix gently so as to keep the guacamole chunky rather than a smooth purée.
Garnish the guacamole with the sliced or crumbled hard-boiled eggs and cheese. If desired, sprinkle the oregano on top.

2. Asia: Lebanon
Lebanese Avocado Appetizer

Serves 8
4 tablespoons lemon juice; – about 1/2 a large lemon
3 tablespoons sesame tahini
1 1/2 cups avocado
1/4 cup parsley or cilantro (chopped)
1 tablespoon olive oil
1 clove garlic (crushed)
1/4 teaspoon Salt
1/4 teaspoon Pepper
1 pinch cayenne
1/2 teaspoon Paprika

Place lemon juice and tahini in a blender or food processor and blend for a moment. Pit and peel avocados and cut into pieces. Add remaining ingredients except paprika into the tahini/lemon mixture and blend to a smooth paste. Place on a flat serving platter; sprinkle with paprika and serve as is or chilled. Serve with toasted pita.

3. Europe: Greece
Greek Inspired Guacamole

Serves 8
2 medium to large ripe avocados, halved, pit removed
1 lemon (juiced)
1  Tbsp chopped sun-dried tomatoes
3 Tbsp diced ripe cherry tomato
1/4 cup diced red onion
1 tsp dried oregano
2 Tbsp fresh chopped parsley
Sea salt and black pepper to taste

In a medium bowl, use a fork to smash the avocado until chunky. Add a lemon juice before adding remaining ingredients, and stir to combine. Sample and add salt and pepper if needed. Enjoy immediately with pita, or vegetables!
